A Recipe (found on recipesource.com)

This is a great recipe for banana squares. I found it on the internet a couple years ago when I had some bananas that were at the make banana bread stage but I wanted something that was quick and easy (the actual baking takes 45-50 minutes). Anyway, I baked some today and thought maybe somebody would be interested in the recipe. I have not been able to get the soft peeks with the egg whites and it still turns out delicious. The boys love them as do I. Mark has never tried them, though.

Here it is:

Title: Banana Squares
Categories: Breads, Fruits
Yield: 12 Servings

----------------------------TASTE OF HOME 4/5/94----------------------------
2 Eggs; separated
2/3 c Shortening
1 1/2 c Sugar
1 c Mashed ripe bananas (2 to 3 Medium)
1 1/2 c All-purpose flour
1 ts Baking soda
1/4 c Sour milk
1/2 ts Vanilla extract
1/2 c Chopped walnuts, optional
Whipped cream and sliced Bananas; optional

In a small mixing bowl, beat egg whites until soft
peaks form; set aside. In a large mixing bowl, cream
shortening and sugar. Beat in egg yolks; mix well. Add
bananas. Combine flour and baking soda; add to creamed
mixture alternately with milk, beating well after each
addition. Add vanilla. Fold in egg whites. Fold in
nuts if desired. Pour into a greased 13x9x2" baking
pan. Bake at 350 degrees for 45-50 minutes. Cool on a
wire rack. If desired, garnish with a dollop of
whipped cream and a few banana slices.

* = To sour milk, place 1 tsp. white vinegar in a
measuring cup. Add enough milk to equal 1/4 cup

A Movie Review * * * * *

Mark and I had a date night last night (12/22) and we went and saw "Night at the Museum". I really enjoyed it!! I thought it was a fun movie. I thought Robin Williams did a great job in his role as Teddy Roosevelt. The highlight for me I think was seeing Mickey Rooney and Dick Van Dyke in it. I don't want to go into specifics and spoil it for anybody. I have to say that Mark did not care for it and that seems to go along with reviews that I read that seemed to be 50/50 on like/don't like.

I did not realize how high the movies had gone. It is $9 for each to get in and another $15 to $20 I think for pop corn and a drink for both of us. Needless to say we will figure something out a little cheaper the next time we get a date night (they are few and far between). Any questions about this movie? Feel free to ask. And if you see it let me know what you think of it.

Old Faithful

Here's my story about this part of my trip to Yellowstone.

We arrived at Old Faithful and set down to wait for it to spout (for lack of a better word right now). Little did I know we would be waiting about 30 to 60 minutes. So we waited and waited and waited (it seems like a very long time when you have 3 boys who have been sitting in the van a few hours before). Finally, it erupts (for lack of a better word, again). It was pretty cool. We go back to the van and I strap John in his seat and then I have my own Old Faithful when John gets sick. This is just the beginning...

Christmas in 2 weeks

Mark wrapped Christmas presents yesterday and put them under the tree. Luke and Matthew told me that mine was the biggest and so I had to look! Mark is pretty sneaky I didn't even know he had shopped for me. I know Mark probably put a smaller package in a big box. Mark tells me the boys should be able to handle it for a couple weeks and then I say "yeah, THEY can handle it." I could hardly wait to open my presents when I was growing up and it hasn't changed a whole lot now that I am older. So I am going to be in suspense for the next couple weeks. I'm not complaining, mind you. Cheryl

OUCH!!! number 2

I went to the orthopedic doctor today and the diagnosis from the urgent care Dr. was wrong. I have Rotator Cuff Sub Acromial Calcific Bursitis or easier is Rotator Cuff Impingement. I need physical therapy and he said 2/3 of people with this respond well to therapy and 1/3 still will need surgery. Of course, I will be praying that I am part of the 2/3. When the Doctor walked in the room he said that it hurt [him] to look at my x-rays. You all wanted to know that, right??? Take care, everybody. Cheryl

Prediction

My prediction for when we will get snow (we will probably get it sooner, this is for just one of the times) in the Dayton area is uummmm, let's see, January 23rd, 2007,2008,2009... It will be a snow storm and no one will be able to go anywhere.

OUCH!!!

I have not been sleeping very good (only about 4 hours a night) the last 3 nights because of severe pain in my shoulder down into my arm. You don't know how much you take simple things like taking a shower or being able to change a diaper for granted until you are in so much pain just to lift an arm up that you want to cry. I went to urgent care and had a couple x-rays taken and the doctor said it was tendonitis. I now have pain medicine so hopefully I can sleep tonight.

Yellowstone Park

I saw the hula hoop guy first and had no idea what it meant. As we walked up to the bridge, to come to this sign, I saw a hole next to the bridge and thought to myself, that looks like a hole something would live in. And almost immediately after that thought, I saw this huge snake coiled up about a foot away from it! I was too scared to take a picture of it and didn't tell the boys about it and just kept going. I made sure we crossed on the other side when we went back and was praying there wouldn't be one on that side, too. I do not like snakes.
